Griddle-pan waffles


Crack the eggs into a bowl, add the milk and whisk to combine. Sift in the flour, baking powder and salt then whisk until fully combined. Add the cooled melted butter and gradually stir it through the mixture. It's important not to stir the mixture any more after this or your waffles may be tough.

Place your griddle pan over a high heat, add the extra teaspoon of butter and as soon as it's melted pour in the waffle batter and spread it around to fill the pan. You could also make smaller waffles, if you prefer – you'll need to do 2 at a time.

Lower the heat to medium-low and cook the waffles for around 6 minutes, or until lightly golden on the bottom. Flip over and continue to cook for around 6 minutes, until golden and cooked through. (It can be tricky to flip a whole waffle, but be bold and go for it – if it breaks, don't worry, you can rock the rustic look.)



·  2 free-range eggs
·  300 ml milk
·  225 g self-rising flour
·  2 teaspoons baking powder

·  100 g unsalted butter, melted and cooled, plus about 1 tsp extra








Avocado Melts with Arugula



Avocado Melts with Arugula Make a vegetarian sandwich super-satisfying by incorporating big flavors (jalapeno jelly, arugala) and rich textures (avocado, cheese).

 Ingredients
 • 4 thin slices sourdough bread
 • 2 small ripe avocados, seeded, peeled, and cut up
 • 1/2 teaspoon ground cumin • 1 large tomato, sliced
 • 4 slices reduced-fat Monterey Jack cheese*
 • 1 - 2 tablespoons red or green jalapeno jelly • 1 - 2 teaspoons lime juice
 • 2 cups arugula

Directions 

1.
 Preheat broiler. Place bread slices on the unheated rack of a broiler pan. Broil about 5 inches from the heat about 2 minutes or until bread is lightly toasted, turning once halfway through broiling. Remove from broiler.

 Meanwhile, in a medium bowl combine avocados and cumin. Coarsely mash with a fork or potato masher (mixture should still be chunky). Spread avocado mixture on toasted bread slices. Top with tomato and cheese slices; set aside.

 In a medium microwave-safe bowl microwave jelly on 100 percent power (high) for 20 to 30 seconds or until melted and slightly bubbly. Stir in lime juice; cool. Add arugula to jelly mixture; toss to coat.

 4.
  Return sandwiches to broiler. Broil for 2 to 3 minutes more or until cheese is melted. To serve, top sandwiches with arugula mixture.

 •*Tip: If you can't find reduced-fat Monterey jack cheese slices, then slice 3- to 4-oz from a block of reduced-fat Monterey jack cheese and divide evenly among sandwiches. Or replace the reduced-fat Monterey Jack cheese slices with reduced-fat slices of cheddar cheese.

Salsa Chicken
"Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!"

Directions
  1. Preheat oven to 375 degrees F (190 degrees C)
  2. Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
  3. Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
  4. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

How to make cake without oven 
 (Without eggs & butter) 



Often my friends,relatives and readers keep asking me to post a cake recipe without using an oven. As pressure cooker is most commonly used in many households, they wanted to bake a cake using pressure cooker.I didnt give serious thoughts on it until last week when my cousin gave the idea to make a pressure cooker cake for this christmas....I loved the idea too as with unexpected power drop outs, baking a cake has become a rarity these days...So the idea of pressure cooker cake was a great relief to me....There is no better time than this festive season to try this cake....So I browsed around and found this recipe which had no eggs and butter....I tried it yesterday and the cake came out so soft and spongy that it got over yesterday itself.


This is the first time I am using a cooker to bake a cake ,so I  was a bit worried about the outcome of the cake and the damage it might cause to the pressure cooker....but the cake turned up great without causing any damage to the cooker ....Now no more excuses, you can bake soft, fluffy cakes using a cooker too...take my words and try this cake confidently. Pressure cooker Cake

Important things to be noted before starting to bake in a pressure cooker
  1.       Remove the gasket from the pressure cooker
  2.       No whistle required to make pressure cooker cake.
  3.       Do not add water inside the cooker
  4.       Choose a cooker that is wide enough to hold your cake tin. Your cake tin must fit inside the pressure cooker without touching the cooker directly(on the sides and bottom)
  5.      Be very careful while placing the cake tin inside the cooker and while removing it outsid e after the cake is baked as it will be very hot.
  6. .      Make sure the cake tin doesn't touch directly on either sides of the cooker.
Method:
1.      First choose a pressure cooker that is wide enough to hold your cake tin.Remove the gasket(black rubber) from the lid of your pressure cooker.A stand usually comes with the pressure cooker, I used that stand.

2.      Place the stand inside the cooker as shown below....Close the cooker with a lid with no whistle,dont water water. Keep the flame to medium high for 5mins - this is how we preheat the cooker to set an oven like atmosphere.Then using a pot holder carefully lift the cake pan and place it inside the cooker on the stand without touching the sides of the cooker.

3.      Pressure cook without whistle in medium heat for first 5mins then lower the heat to little above sim and cook for 30-35 mins or until a  tooth pick inserted comes out clean.After 30mins switch off and leave the cake in the cooker for 5more mins then open.Carefully remove the cake pan from the cooker and place it on a wet cloth for 5mins.Then invert the cake tin to dmould the cake easily.

My Notes:
  • It is not advisable to use pressure cooker for regular baking may be for occasional use it is ok.As regular usage may cause the cooker to malfunction.
  • If you dont have the cooker stand dont worry you can even use the container which you use for keeping rice/dal....the set of containers that comes with the cooker, or use any container which can accomodate your cake pan.
  • You can choose any cake recipe for baking it in pressure cooker but the timing may vary depending on the consistency of the batter.
  • Cooking time may vary depending on thickness of pressure cooker, size of the cake tin and temperature settings of stove.
  • I used my 5 litre aluminium pressure cooker. The cooker and the stand did brown a bit so I soaked in water for a while and  then cleaned it up, but not much of damage I would say.
  • You can use nonstick cooker too as the orginal recipe from where I referred used that. But I am not sure if the stainless steel cooker can handle this cake.
